July

I have to admit it.. July has been a month with a lot of ups and downs filled with happy memories but also countless sleepless nights and many deep exhausting thoughts.

Will I get in at university? What if it’s not what I expect? Maybe I should have chosen differently? Books, new computer, travel expenses, birthday… can I afford it? Where will I get the money?
I wish to move out but where will I get an apartment and when?
Is he thinking of me and more importantly, why do I even care?
Is she gonna make it?

The month began with a family holiday to a lovely summerhouse in Southern France and two nights in Paris on the way home. I had a great time relaxing and just being together with my parents and grandmother after not seeing them for two months. When I came back to Denmark everything just started to go crazy. Friendship problems, drama and my best friend’s mom being diagnosed with severe cancer was just heartbreaking.

You never know how strong you are...-0Auntil being strong is the only choice you have

With everything going on my brain of course decided to have a huge “what-am-I-doing-with-my-life” meltdown ( (funny how that happens) and the outcome of that crisis is what you are reading right now.. my blog. This blog is kinda my open diary to the world and I am very excited and committed about it becoming something to help me through everyday and be a place where I can learn more about myself and get to know other bloggers and readers.

Besides blogging I have spent many hours walking my dog around my neighborhood with music in my ears. This month I have listened to 5 Seconds Of Summer‘s debut album basically every single day. My favorite tracks are by far Amnesia, Never Be, Long Way Home and Everything I Didn’t Say which all are songs that make you think. If you have a listen you’ll see they are the more chill and deep songs on the album which kinda tells something about my mood this past time. Here’s the link for the whole album on Spotify and YouTube. Music just makes every day a little bit better, don’t you think?

On the positive side – I START UNIVERSITY NEXT MONTH! I am beyond excited and I can’t wait for a new chapter in my life to begin. I will be 21 two days before school starts and both me and my best friend will be in the same class! How cool is that?

August will bring a lot of exciting things and I really need this new start. Out with the old in with the new, right?

These Wings Are Made To Fly

This Wednesday I will get my acceptance letter from the university I applied to. Even though I am 99 % sure of getting accepted I am still anxious about it. Not nervous if I get in or not but what if it isn’t the right place for me?

The past month or so I’ve finally figured out what I want to do with my life. I want to work behind the scenes in the music/media business. I want to plan tours, set up concerts, create amazing events and I want no days to be the same! I want it so bad and I just know it’s the right choice for me.
I know it in my heart and I feel it in every fiber of my body.

But now that I know that millions of thoughts have find its way into my mind. What if Performance Design isn’t the right choice? Is Music Management better? Should I have taken the international line instead of the Danish one? Should I have tried to get in a school in London or New York?

I have so many dreams and goals for the future and I feel like I am running out of time – and I’m only 20 years old! There is so much I want out of life and I’m terrified of not getting to do all of the things I dream of; living abroad, working with the biggest and most successful brands and companies in the world, creating memories and to be everything I can be. 20140726-215938-79178408.jpg

My absolute biggest dream is to work at record company and alongside some of the biggest artists in the world. Working behind the scenes on a world tour is my ultimate goal. Imagine traveling to the most exciting and amazing places whilst doing what you love. It’s everything I wish for.

I never want to look back on my life thinking ‘what if?’.

We only get one life and I am terrified I won’t live it to its fullest. I know it’s not possible to live everyday like it’s your last but I am willing to make everyday a little better than yesterday. I want more than just the average life with an average education living in a average town with an average family. Life is too short for average. I want excitement, adventure and experiences.

I am so ready for this life to begin and I will work so incredibly hard to fulfill my dreams. I need it to happen. It has to happen.

New York, LA, London, Sydney – no matter where it takes me I am ready! Bring it on.

What’s your dream? It can be anything big or small. Do you want to be the next superstar in Hollywood, a big family with lots of kids or see the Great Wall of China? Let me know in the comments, would love to read them xx.

Best Summer Treat Recipe

I know most of you have absolutely no idea what koldskål means and I don’t blame you.. my language is pretty damn weird! Anyway I have searched the internet high and low to find a translation just to find out there isn’t any. The best I could come up with is the direct translate which is cold bowl. Lol.

But hey! Now you know a word in Danish I guarantee you your friends don’t know.

This dish is a very traditional summer dish in Denmark and you can eat it anytime during the day. People mostly have it as dessert but in my family we eat it whenever we get the chance.

20140722-173835-63515591.jpg

Ingredients (for 4 people)

2 liters of buttermilk

1 lemon

1 fresh vanilla pod

2-3 tbs sugar (or a sugar/sweetener alternative, your choice)

Fresh or semi frozen berries

Kammerjunkere (a kind of biscuit) – for an alternative look further down

Mix the buttermilk with zest of the lemon, scraped vanilla seeds, the whole pod and sugar.

Adjust the flavor to your taste with sugar and lemon juice. I like it when it’s more to the lemony side and not too sweet especially because we mostly eat it as dinner and therefore I don’t want it too sweet.

When mixed and you’re happy with the taste put it in the fridge for at least an hour till it’s really nice and cold.

NOW HERE IS THE FUN PART! You can add any type of fruit you want on top and make it even more summerly and not to mention healthy.

We always always always add raisins and if we have fresh raspberries or strawberries those too.

Another essential is kammerjunkere. They are local dry, crispy biscuits that just give that good crunch. As I know kammerjunkere is a Danish ingredient and not many other countries produce these little beauties I have an alternative.

You need for 4 people

4-6 slices of rye bread (preferably thick slices)

About 25 grams of butter (adjust to the amount of bread and to your liking)

Cut the bread into quite rustic bites

Melt the butter on high heat

When caramelized saute the bread for a couple of minutes

You want a crunchy but not a hard texture. You can add honey too if you like it to be sweet and sticky. Then you just saute the bread first in a little bit of butter for a couple of minutes and then add honey at the end.

ENJOY! Let me know in the comments what you think
