The Autumn Tag

Tomorrow it’s October 1st and that means we are just as close to Winter as we are to the Summer that’s over. Seriously where did 2014 go? This year has just flown by and now there’s only three months left. Luckily I don’t mind Autumn at all so I thought why not do a little tag? Feel free to do it too if you want! Favorite thing about Autumn?

Denmark becomes the most beautiful place during Autumn so I really love going for a walk in the forest when it’s warm and sunny. On rainy cold days the best thing is to cuddle up with a blanket, a book, my laptop or watching something good on TV and just enjoying being able to do exactly what I want to do.

Worst thing about Autumn?

When it’s cold, windy and rainy and I have to leave my house. Not a fan.

Favorite movie or show?

Don’t think I really have a favorite Autumn movie but for some reason I do love during colder times to cuddle up and watch more serious movies like The Help or Hunger Games or even doing a Harry Potter marathon! When it comes to TV-shows my newest obsessions is Faking It! Reminds me a lot of Awkward (another all time fave) and I just really like the twist.

Favorite drink?

The amount of judgmental looks I’ve received when telling people I don’t like drinking hot beverages is ridiculous (I have never had a cup of tea, coffee or chocolate in my life). However I do love drinking cold cocoa and that’s usually my go to drink when I’m home and need a treat.

Favorite scent?

Let’s just get something straight. I. HATE. SCENTED. CANDLES.
Doesn’t matter what scent it has I just can’t stand the artificial smell. However I do love the smell of a burning fire or freshly homemade bake goods.  

Autumn treat?

Cake. Cocoa. Chocolate. Combine those three things and I will love you forever.

Favorite place to be?

At home on my couch or at my parents’s house. Basically if it involves something cozy, delicious and a couch I’m there.

Favorite nail polish?

I have always been kinda afraid of the darker shades but this year I have been in love with Essie’s Island Hopping. It’s so pretty and it’s the perfect dusty pinkish shade. Not too dark not too bright. Generally loving the gold, pink, grey and brown shades. The same with eye shadows.

I told you it was beautiful didn’t I?

Pasta With Spinach, Bacon and Mushrooms

The funny thing is when I cook I rarely cook the same thing twice where it’s completely the same dish. I always twist it and often I end up with another lovely recipe. This time I was in the mood to cook a pasta dish and I have for a long time (because that’s how my cooking brain works) wanted to do something with spinach so I thought ‘why not mix these two together?’.

So I did, it was awesome, and here is the recipe for you. You can have this just as a vegetarian pasta dish if you don’t add bacon, or you can add chicken or have a chicken breast or salmon fillet on the side. It all works just go with the flow.

Ingredients (for 4 persons)

500 grams of fresh fettucini pasta

About 50-100 grams of diced bacon

300 grams of mushrooms (cut in quarters)

500-750 grams of frozen spinach

500 ml of low fat cooking cream

1 large onion (cut into half thin slices)

Garlic to your tasting (a couple of cloves is enough)

Fresh tomatoes

1 ml of water


How to

Saute bacon until golden. Add mushrooms, onions and garlic and saute on high heat for 5 minutes or till the mushrooms are golden and the onions clear.

Add the frozen spinach, a splash of water and cook until the spinach is completely defrosted.

Add cream and season with salt and pepper. Let it cook for 5 minutes until it’s thickened.

Add your pasta and cook according to the instructions on the package.

**Make sure your sauce is on high heat but not boiling like crazy just simmering. Mine took 4 minutes to cook and was perfectly al dente because you cook it in the sauce and not in water where it is easy to overcook.

Now add slices tomatoes (and if you really want to treat yourself – fresh quality feta. A M A Z I N G) and serve!

It’s In The Little Things

I am guilty. Guilty in forgetting what matters in life. Guilty in worrying too much about my future, spending to much time complaining about homework, work or a delayed train. Guilty in being annoyed when something doesn’t quite go my way and not realizing and appreciating what I have.  I don’t want to be that person.

When I was a kid just the thought of being an adult was something I couldn’t really wrap my head around. It felt like it was a lifetime away but look at me now; I am 21 years old, about to move out all on my own and I have just started university. I am closer to 30 than 10 and frankly that scares the shit out of me. Life has so much to offer and I sometimes it feels like I’m just wasting days by doing nothing instead of trying to LIVE. But no more. little things

We need to start appreciating what and who we have in our lives. Tragedy happens in a blink of an eye and before you know it someone you love is gone forever. Not only do we need to appreciate more but we also need to realize and notice the details. Yes your train was delayed but did you notice the little happy boy jumping in his father arms on the opposite side of the tracks? Did you notice they played your favorite song on the radio on the way home and did you notice the amount of work your mom had put into dinner? Maybe you did but realistically you didn’t.

So today I will remember the fun time I had with my mom trying to help coming up with a costume, I will remember laughing with my best friend over the fact my teacher used the word ‘fishy’ six times during his lecture. I will remember the warm autumn sun and how much I appreciate playing with Percy out in the fields before spending the evening on the couch with a good movie, chocolate cake and the company of my parents.

It’s the little things that make just another Wednesday into something special.

The Struggle of Having an Unusual Name

I haven’t told anyone this yet but my name isn’t actually Tess. It’s a nickname I’ve used since the 6th grade as I found my real name to be too “grown-up” and just too difficult when it came to introducing myself or for someone to spell. When you are in that age all you want is not to stand out and my name did make me do that. Okay this sounds like my name is some weird hippie name like Tessalani or something like that. It’s not.. It’s Theresa.

I bet many of you from the US or the UK is thinking what’s so unusual about that? as it’s a common name in your countries but in Denmark it’s not. I am currently sharing ‘Theresa’ with 744 other women in Denmark while the more popular version ‘Therese‘ is used twice as much . That’s not many when there’s a population of 6 million people.

Therefore I know EXACTLY how it feels when you have to say your name 3-4 times before people get what you’re actually saying. The struggle is real guys and here’s why.

1 // People can’t spell it.
“Yes it’s Theresa with H. No it doesn’t end with an E but an A”.

2 // They pretend it’s something more common.
“Did she say Theresa? She probably didn’t I must have heard wrong. I’ll just call her Therese until she corrects me.”

3 // You have to repeat it several times.
“Hi i’m Theresa.”
“Sorry what?”
“Theresa”
“Therese?”
“No TheresA(!)”
“Okay, nice to meet you Therese”
“……”

4 // Even people who actually knows your name will still call you something else.
I have worked in the same shop for 5 years and one of my co workers still calls me Therese despite knowing it’s not my name. I gave up correcting her several years ago.

5 // When the secretary at the doctor’s office says your name repeatedly on the phone when telling you you have an embarrassing decease whilst sitting in a room full of other patients.
Yes this happened. Yes it was embarrassing. Yes I am the only in my little town who’s named Theresa.

6 // New people you’ve met like once are afraid of talking to you again because 9/10 times they aren’t sure about what your name actually is and instead of making an awkward situation they just avoid having to say your name
Happens. All. The. Time. Come on people it’s not that difficult!

7 // It’s impossible to find a mug, key ring, card etc with your name on
I cannot stress how many times as a kid I have tried to find SOMETHING with my name on it. Broke my little ‘I-just-wanna-be-like-everybody-else-heart’

8 // Can be difficult to pronounce or to hear what you’re actually saying
In English Theresa is not a problem but in Danish it can be for some people in that way it can sound kinda “hollow”. It’s hard to explain but that’s just how it is. Luckily for me my mom could have chosen other Danish names that are like impossible to pronounce unless you are from Denmark. Can be names like Solvej, Ingeborg, Asta, Agnete and others like that. Old and very popular Danish names but impossible to say correctly if you aren’t from around here.

9 // If your name has a link to something or someone famous.
If only I had a dime for every time I have heard ‘Mother Theresa’ the past 21 years… Kids aren’t the most witty ones. The joke gets old guys.

10 // When your nickname is just as unusual as your first name
These past two weeks where I have presented myself a million times for my new classmates it has gone something like this 90 % of the time

“Hi, I’m Sara”

“Hi Sara, I’m Tess”

“Tess?”

“Yeah Tess. My real name is Theresa but everyone calls me Tess”

“Cool Therese”

” .. Just call me Tess”.

11 // When your last name is even more uncommon than your first name
Do I even have to comment about that… This is me in a nutshell.

With all of this being said I do love my name as it makes me unique in my own way. The fact that I am the only in the entire world with my name combination is hella cool and I am happy that my mom chose this name for me. Despite the struggles I meet ever so often. Embrace your name ladies and gentlemen! It’s who you are.
